Description:
The Executive Chef leads the full culinary portfolio of Hard Rock Hotel Bali, including Jamie Oliver Kitchen, overseeing all kitchen operations to deliver exceptional food quality, creativity, hygiene, and guest satisfaction. This role drives culinary vision, operational excellence, and team leadership while ensuring menu innovation, strong cost control, and maximizing profitability across all dining venues.
Key Responsibilities
- Full accountability for daily kitchen operations across all outlets
- Leadership and direction of the entire kitchen brigade, including recruitment, training, development, and performance management
- Menu development, innovation, and seasonal menu planning aligned with brand standards and guest expectations
- Management of food cost, budgeting, and profit margins
- Collaboration with purchasing and suppliers to ensure quality, consistency, and cost control
- Implementation and maintenance of HACCP/NSF International Standards, food safety, and hygiene standards
- Development, documentation, and enforcement of kitchen SOPs
- Effective cross-departmental communication with F&B, Finance, Purchasing, and Operations
Requirements:
This is a senior leadership opportunity for an accomplished Executive Chef with proven experience in leading large-scale kitchen operations within 4–5 star hotel or resort environments. The role requires a minimum of five years’ experience at Executive Chef level (or equivalent) within international-standard F&B operations, with a strong focus on culinary excellence, team leadership, and commercial performance.
